Omnipollo Zodiak Multiverse

My drinking relationship with Omnipollo is one of intrigue and utter bewilderment. On the one had, the gypsy brewer knows how to continually reinvent the wheel with various ingredients and adjuncts. On the other, some of those adjuncts and descriptors are just too far fetched at times for this old drinker.

Zodiak Multiverse (8% ABV) is about as straightforward an imperial IPA as I’ve encountered from the company. And yet, there’s a bit of a curveball within the beer’s golden amber depths. Yes, the typical pine, grapefruit, pineapple and hints of honey persist, but the grain bill and dryness give the beer an almost pilsner-like quality. The relatively mild level of bitterness only adds to that sensation as a light, sticky sweetness sticks to the lips after each sip.

This big IPA isn’t half bad. In fact, I quite enjoyed it. I’d personally prefer a touch more of a hop bite in any imperial IPA and perhaps some more pungency, but I’ll take that pilsner-esque trait over any comparisons to a slushy or anything brewed with marshmallow. Zodiak Multiverse hit the spot nicely and, if it ever makes its way around these parts again, will certainly show up in my fridge again.
