Avery Xolotl

I’m not going to pretend that I know how to properly pronounce Xolotl, but I can tell you that Avery have themselves a pretty darn tasty stout with its release. This 13.7% ABV imperial stout has been aged in bourbon barrels with cacao nibs, vanilla beans, chilis and cinnamon for an undisclosed length of time.

Xolotl is wonderfully rich and moderately sweet as it glides smoothly over the tongue. Cocoa, soft bourbony notes and wood are carried on a viscous mouthfeel as a gentle peppery heat lingers lightly in the background. Cinnamon and vanilla bean are present as well, serving to accentuate flavors and not distract from the base beer. I’d personally like a touch more bourbon, but its level is more than acceptable here.

It may be hard to pronounce, but Xolotl keeps it relatively simple with the flavors. Everything is nicely balanced amongst one another within the dark, full-bodied brew as a moderate sweetness lingers with a hint of pepper heat. I thoroughly enjoyed this big beer, but would personally love to taste a bit more bourbon and, perhaps, feel some more chili fire. Other than that, if you’re a stout fan looking for something a bit different, this is the one for you.
