Sly Fox Ichor

This bottle of Sly Fox’s Ichor is the last of three products from the company that I purchased (and drank) back in early November of last year. I saved it for last since Belgian quadrupels are typically big beers both in terms of flavor and potency. Ichor is a richer flavored brew than the Saison Vos and Incubus, but at 10% ABV, it’s actually less potent than the brewery’s tripel.

Much like the first two brews, Ichor hits the style the brewery is going after pretty solidly and is the best of the trio. It’s got a rich flavor with plenty of dark fruits, sweetness and booziness that suits the style well. It’s also a brew that I can see improving a touch with some cellaring.

Appearance

Dark garnet in color with a frothy crown of beige foam, Ichor looks the part.

Aroma

The nose is filled dark cherries, raisins, plums, yeast, sweetness, light alcohol and spice notes.

Taste

Ichor is definitely a big beer with regard to alcohol and flavor. The plum, cherry and raisin arrive first with a moderate sweetness and strong malt character. The Belgian yeast and spice notes wash through smoothly next before fading to a warming and semi-dry finish. The alcohol presence it strong within this beer as is typical of many quadrupels I’ve had.

Overall

I enjoyed Ichor the most of the three beers from Sly Fox that I purchased. It’s got good flavor and a “cellarbility’ that I hope to take advantage of in the future. I just need to find another bottle or two to store a way for a bit.
